This is a honey processed (or pulped-natural) coffee from Kateshi Estate in the Northern Province of Zambia. In honey processing, most, but not all, of the sweet flesh of the coffee cherry is removed from the seed before it is dried. The small amount of fruit left on the seed leads to increased sweetness in the cup. This is a great brewed coffee, with hints of peach, citrus, carmel, and hops.
